1 teaspoon of olive oil
2 fillets of salmon
2 ripe mango, peeled & chopped
2 tablespoons chopped coriander
1 tablespoon of fresh lemon juice
2 red peppers
- Heat the oil in a non-stick pan in medium heat, place the salmon and add with salt and pepper.
- Season for 3-4 minutes each side of salmon, chop the mango, peppers, coriander and add the lemon juice to a bowl.
- Cut the asparagus and place in a pot of boiling water for 2-3 minutes until they become crisp & green.
- Serve the salmon and the vegetable ideally right away.
