1 sea bream gutted and cleaned
1 garlic clove chopped
400 gr of cherry tomatoes
2 sprigs of parsley
2 sprigs of rosemary
1 orange cleaned and cut into washers
1 cup of orange juice
1 teaspoon lemon juice
1/2 cup of olive oil
1/2 cup of white wine dry
- Preheat the oven at 180 °C. Rinse the sea bream, pat dry and slice several slits in the thickest part of the fish.
- Brush the inside and outside of the fish with the oil mixture, fill with herbs, the slices of orange and arrange over the vegetables.
- Meanwhile, arrange the vegetables and the cherry tomatoes in a baking dish. Mix the oil, the lemon juice and orange zest together and season with salt and pepper. Cover the fish with grease.
- Bake for about 40 minutes. Remove the fish from the vegetables and turn off the oven and let the fish rest in the oven with the door ajar.
